PACHI PULUSU
INGREDIENTS:
5 red chillies or green chillies
3 garlic cloves
10-12 curry leaves
1 medium sized onion
25 g tamarind
1 tsp cumin
1 tsp salt
2 tsp sugar
2 tbsp oil
4 cups water
INSTRUCTIONS:
Firstly soak tamarind in 4 cups of water, chop 1 medium sized onion finely , mash the garlic cloves with a knife or spatula coresly and keep them aside.
Now keep a pan on the stove, once it is heated add 2 tbsp oil to it.
Once oil is hot enough add 5 red chillies or green chillies and fry them till they are cooked well.
Transfer them into a bowl and let them cool down.
Now add the 1 tsp cumin seeds, 10-12 curry leaves and already mashed garlic cloves.
Once the garlic smell turns aromatic, off the stove and keep the pope aside.
Mash the tamarind well so that the sour juice comes out of the tamarind and mixes well in the water.
Filter the tamarind water,add 2 tsp of sugar to it and let it dissolve in the water.
Mash the chillies using any masher and add them to the water along with pope, finely chopped onion and 1 tsp salt.
Mix the water well and test the taste, if the taste is not for your preferences you can adjust them accordingly and serve it.
