Beerakaya Tomato Chutney



BEERAKAYA TOMATO CHUTNEY



 

Beerakaya means ridge gourd or luffa in english. It also goes with names of heerekai in Karnataka, peerkangai in tamil Naidu and turai in hindi. It is native to central and Eastern Asia.  Ridge gourd is very high in fiber which is good for easy digestion. Beerakaya tomato pachadi is a south indian dish which is usually served with rice but it can also be served with roti, dosa etc.

SERVES: 5-8 members



INGBEERAKAYA TOMATO CHUTNEYREDIENTS:

  • 2 medium sized Beerakaya (ridge gourd) 

  • 3 medium sized tomatoes 

  • 5 green chillies 

  • 4 garlic cloves

  • A small bunch of coriander leaves

  • 1 tbsp coriander seeds

  • 1 tbsp cumin

  • 1 ½ tsp salt

  • 5g tamarind

  • 2 tbsp oil


INSTRUCTIONS:

  1. Cut a small piece of ridge gourd and taste it. If it tastes bitter then don't use it as it will make the dish bitter, use the ridge gourds which are not bitter.

  2. Wash the ridge gourd and peel the skin off (if the gourd is tender then you need not peel the skin) and chop it roughly into medium sized pieces and keep them aside.

  3. Now take tomatoes and green chillies, chop them and keep them aside.

  4. Now place a kadai on the stove top and add 2 tbsp of oil to it.

  5. Once the oil is heated add the green chillies, once cooked transfer them to a plate and keep them aside.

  6. Now into the same pan add chopped vegetables,1 tbsp of coriander seeds, 1 tbsp of cumin seeds and cover the kadai with a lid.

  7. Let the vegetables cook on medium high flame for around 15-20 min.

  8. Once the vegetables are cooked thoroughly, take the lid off and cook them till the water has evaporated.

  9. Once the water has evaporated, switch off the stove, add the 5g of tamarind and let it cool down.

  10. Now in a mixer jar add the already roster chillies, 4 garlic cloves and blend them corasly.

  11. Add the cooked mixture into the mixer jar, salt as per taste(approx 1 ½ tbsp) and grind it corasly. 

  12. Now transfer the chutney to a bowl, add chopped coriander, mix it thoroughly with a spoon and the delicious  beerakaya (ridge gourd) tomato chutney is ready.
