USIRIKAYA THOKKU
Usirikaya is a Telugu word for gooseberry in Hindi it is known as amla. Amla is a sour fruit and has many health benefits like it is eight times richer in vitamin c than an orange. Amla is good for hair, eye sight, burning fat,improves eyesight and also helps in fighting common cold.
Usirikaya thokku is mostly consumed in andhra state with rice or any south indian breakfasts.
Usirikaya thokku is not the final recipe, it can be used in different ways like mentioned in the below notes.
INGREDIENTS:
1 kg gooseberries/amla/usirikaya
2 cups salt
4 cups red chili powder
2 tbsp turmeric
½ cup fenugreek seeds/menthulu/meethi seeds powder.
INSTRUCTIONS:
Firstly wash all the gooseberries/amla/usirikaya, pat dry them and keep them aside.
Cut the amla into small pieces and take all the seeds out.
Now in a bowl add the cut amla pieces, 2 tbsp of turmeric powder,1 cup of salt and mix them thoroughly.
Now to a mixer jar add the mixed amla pieces and grind them into a coarse paste.
Transfer the paste into a bowl, cover it with a lid and set it aside for 24hr.
After 24 hrs add the 4 cups of chili powder,½ cup fenugreek seeds powder,1 cup salt and mix it thoroughly.
Set the freshly mixed thokku aside for 24hrs and the spicy, usirikaya thokku is ready.
NOTE:
Store the usirikaya thokku in a glass jar, if stored in a refrigerator it lasts for a year.
Usirikaya thokku is not the final dish, whenever you want to have it, tamper it with a freshly made phope and mix it thoroughly and usirikaya pachhadi is ready
Mix the usirikaya thokku with a bowl of rice and tamper it with phope and usirikaya rice is ready to be packed for lunch. This rice can be served with sambar(or)tomato dal and raita.
Mix 2 tbsp of usirikaya thokku with 2 tbsp of curd and add a bit of thamped phope, usirikaya perugu pachhadi is ready to be served. this can be served with any south Indian breakfast.
Usirikaya thokku can be served with tiffins and also with any rice item.
