ANDHRA STYLE IDLI PODI
There are different types of idli podis, it varies from one region to other,this is andhra style idli podi. Idli podi is also mostly known as gunpowder, the prime ingredients are roasted lentils (chana dal or putnala pappu ) and dried red chillies, with some other spices. This recipe got its name ‘ idli podi ’ because it is mostly served with idli. It is also served with many south indian breakfasts like upma and dosa etc. In my house when there is left over rice my mom used to mix idli podi in rice, a little ghee and reheat the rice and serve it as a snack in the evenings. Idli podi can be stored upto months if kept in airtight glass containers. So, once made it can be used instantly in rush hours.
INGREDIENTS:
1 cup of roasted chana daal
1 tsp of dhaniya seeds (coriander seeds)
1 tsp of jeera (cumin seeds)
5-6 garlic cloves
10 -15 leaves of curry leaves
6-8 dried chilies
2 tbsp of salt
2 tbsp of dried coconut
INSTRUCTIONS:
In a pan dry roast 6-8 red chillies till they become crisp in medium flame, it will take around 1-2 min then transfer them into a plate and keep it aside.
In the same pan add 1 tsp of dhaniya seeds, cumin seeds. Roast them in low flame till they turn aromatic and keep them aside with roasted red chillies.
Now add curry leaves to the heated pan and dry roast curry leaves till they turn crisp ( optionally you can add 1 tsp of oil while roasting these curry leaves) and keep them aside.
Take a blender jar, add 2 tbsp of dried coconut and grind it into a coarse powder.
Now add 6-8 roasted dried chillies ,1 tsp roasted dhaniya seeds, 1 tsp roasted jeers, 10-15 curry leaves, 5-6 garlic cloves(without peeling) and grind it into coarse powder.
In the same jar add 1 cup of roasted chana daal and 1 ½ - 2 tbsp salt and then blend them again for 30 sec.
The idli podi is now ready to be served with idli, dosa, upma etc.
INSTANT IDLI PODI

INGREDIENTS:
2 tbsp of chilli powder
½ roasted chana daal (roasted bengal gram)
5-6 garlic cloves
1 tbsp jeera (cumin)
3 tbsp salt (approx)
INSTRUCTIONS:
Firstly add garlic cloves and jeera to the blender jar and grind it into a coarse powder.
Scrape the sides of the blender jar and add 2 tbsp of chilli powder, ½ cup of roasted chana dal, 2 ½- 3 tbsp of salt and grind it into a fine powder.
Now the idli podi is ready to be served with hot idli and ghee or clarified butter.
If stored in the refrigerator can be stored for up to 1 month.
